2 tbsp ground cumin
3 eggs
Dice the cheese, set aside. Preheat the oven at 460°F (240°C).
In a bowl, mix all the dry ingredients (first list) and in a second bowl all the liquid ingredients (second list). Pour the liquid batter into the first bowl, mix well. Add the diced cheese.
Fill madeleine molds, sprinkle cumin seeds on top (optional). Bake 5 min at 460°F (240°C) before lowering the heat to 350°F (180°C) for 5 more min. The madeleines are ready when their edges are slightly golden.
Savor warm, when the cheese is still melty.
Use muffin molds if you don’t have madeleine molds.
