Salmon Muffins

Salmon Muffins

Ingredients

  • 2 ⅓ cup (300 g) flour
  • 2 tsp (11 g) baking powder
  • 1 tsp kosher salt
  • 2 tsp ground cardamom
  • 1 tsp pepper

  • ½ cup (10 cl) olive oil
  • 3 œufs
  • 1 cup (20 cl) milk
  • 14 oz (400 g) of fresh salmon
  • 7 oz (200 g) of shredded cheese

Instructions

Dice the salmon finely. Preheat the oven at 390ºF (200ºC).

In a large bowl, mix all the dry ingredients (first list).

In a second bowl, whip the eggs, oil, and milk together before incorporating it to the dry mix. End with adding the shredded cheese and salmon.

Pour into muffin molds, bake for about 12 min.

Extras

The recommended cheese is shredded Swiss cheese, but any mild cheese that melts will do the trick.
